With our own bakery - “The Bakehouse” - we can guarantee to provide our hotel and restaurant guests with fresh, crispy bread, rolls and croissants, such as our rustic carrot and nut loaf or light, Tuscan farmhouse bread. Our motto - “Our baking is traditional, natural and fresh” - sums it up: We look back to a baking tradition dating from 1883 and we use only natural ingredients with no additives. Taste the difference! The compliments came in from our guests so thick and fast that since 2013 we have been supplying “food to go” in our Abtsmühle shop. So you can take some Altes-Kaufhaus bread home with you.

Our bakery, “Die Backstube”, is located in the heart of Lüneburg in the historic Abtsmühle area, offering a small but very fine selection of breads, rolls and croissants. The bakery’s success story began with the Bergström Hotel’s desire to offer its guests crunchy baked goods of the highest quality and freshness. And so without further ado, the little bakery was established. It was so popular with hotel guests that in 2013, it started offering its freshly baked goods to take away, available to all Lüneburgers. We deliberately offer a small but special selection of breads, rolls and croissants baked from traditional recipes. We guarantee the highest, consistent quality and freshness, all of course with no additives such as raising agents. We only use natural ingredients, as we have done since 1883. “Fresh with a crunchy crust” - that's what makes Bergström breads and rolls so unique.

our History

With this bakery, the Lüneburg-based entrepreneur and hotelier Henning J. Claassen, has not only fulfilled a long-held dream, but is also following in the centuries-old professional footsteps of his ancestors. His great-grandparents, Claas and Elisabeth, established a bakery in Lüneburg in 1883. Their son, Bernhardt, continued to run the business until 1951, and Henning J. Claassens’ grandfather, Emil-Paul, also followed in the family tradition. In 1907, he and his wife Bertha opened the “East Lüneburg Steam Bakery”, which was later taken over by Claassen's father, Hans-Walter, and was still run by his nephew until a few years ago. Henning J. Claassen has also inherited this love of baking. “When I was at primary school, I had to go through the bakery in the morning to get into the bathroom, which was heated by the oven. The best part was the smell of freshly baked bread when it came out of the oven in the morning. That smell was still fresh in my nostrils when I decided to bake the bread and rolls for the Bergström Hotel myself,” he remembers. And so the tradition continues with “Die Backstube”, and the delicious, crispy bread and rolls are available once again in Lüneburg.
